Abstract
In this work, we described and analyzed the process of compiling
a menu, which exists in the health complex “Berezka”. We
calculated the duration and cost of the whole process and the
duration of each stage separately. All actions included in this
process are classified into 3 categories according to the analysis of
added value. On the basis of the classification the diagram of
Harrington is built in the coordinates of “costs—cycle time”. This
work contains the rationale for the exclusion of activities that do
not add value neither for the consumer nor for the organization,
as well as the rationale for changing the order of steps in the
process. We recalculated the cost and duration of the changed
process “menu planning”, obtained its diagram of Harrington.
